Ted Lasso’s Shortbread Biscuits

Ted Lasso’s Shortbread

Ingredients:

  • 2 cups all-purpose flour
  • ¾ cup powdered sugar
  • 1 cup of unsalted butter, softened
  • ¼ teaspoon of kosher salt

A few notes on making these:

  • These have just a few ingredients and are so simple to make—just remember to rest the dough before baking
  • Here are the little pink boxes to serve the biscuits in if you want to be like Ted! 

Directions

  • Preheat the oven to 300  
  • Butter an 8-inch square baking pan and line with parchment 
  • Using a stand mixer or hand mixer, beat the butter for three to five minutes until it’s light and fluffy. 
  • Add the powdered sugar—very slowly, or you’ll get sugar everywhere. 
  • Next, add sifted flour and salt and mix until the dough comes together. 
  • Transfer the dough to the pan and flatten it using your hands or a metal measuring cup to ensure that it’s spread evenly.
  • Chill dough in the refrigerator for 30 minutes and then bake for 45 to 60 minutes, or until it looks golden-brown but is still a little soft to the touch. 
  • Once the biscuits have finished baking, take the pan out of the oven and let it cool completely before cutting them into slices and serving 

** Slice into rectangles and serve in a pink cardboard box just like Ted :-)
